This soup quickly became one of our go- to recipes this winter! We’re big Italian food fans in our house, and this soup is perfect for a cold winter night! I like to serve this Zuppa Toscana with garlic bread and will either use frozen spinach or fresh kale- either works great!

Zuppa Toscana
This Italian soup is so delicious and comforting- perfect for a cold winter night!
Ingredients
- 1 lb. Italian sausage hot or mild depending on preference
- 1 onion diced
- 2 cloves garlic minced
- 15 oz. can Great Northern beans drained and rinsed
- 3 cups chicken broth
- 2 cups half and half
- 1 lb red potatoes cut into 1 inch pieces
- 1 cup chopped spinach or kale
- Red pepper flakes to taste
- Black pepper to taste
Instructions
- Brown the sausage in a large pot.
- Once sausage is cooked, add onion and garlic and cook until fragrant.
- Add chicken stock, half and half and beans to pot. Cover and bring to a simmer.
- Once the soup is simmering, add potatoes and spinach. Cook for about 12 minutes or until potatoes are tender.
- Season with red pepper flakes and black pepper if desired.
- Serve immediately.
