Cheesy Twice Baked Potatoes

These twice baked potatoes are one of my favorite ways to have a potato and I am a HUGE fan of potatoes! These cheesy potatoes are a decadent side dish perfect for a date night at home or even a weeknight meal addition.

I make these for Valentine’s Day every year and it is always a hit! You could even add bacon, green onions, broccoli to dress them up a little more as well!

Twice Baked Potatoes

Ingredients
  

  • 4 large Russet potatoes
  • 1/2 cup sour cream
  • 2 tbsp ranch dressing
  • 1/2 stick salted butter melted
  • 1/2 cup milk
  • 1 cup Cheddar cheese, plus more for topping
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400 degrees.
  • Wash potatoes and poke with a fork a few times.  Wrap each potato in foil and place into the preheated oven.  Bake for an hour, or until potatoes are baked fully through. *
  • Once potatoes are cooked through and cooled enough to touch, cut each potato in half lengthwise.  Scoop out the inside of the potato into a mixing bowl. Leave the skins to the side. 
  • Add in sour cream, butter, ranch, milk, and cheese.  Add salt and pepper to taste. Mix thoroughly.
  • Scoop potato mixture back into potato skins.  Add more cheese on top, if desired.
  • Put potatoes back into oven until cheese is melted, about 5-10 minutes.  Serve warm.

Notes

*To cook potatoes fully through without an oven:
  1. Wash potatoes and wet 1 paper towel per potato.
  2. Place potatoes on a plate and cover with a wet paper towel.
  3. Microwave for 8-10 minutes depending on the size of the potato until you can pierce a fork through easily.
