hi, friends!
I wanted to share one of my favorite side dishes– risotto, again because it is truly that good! I know that risotto can be intimidating but let me tell you, it is so easy once you understand it.
Basically, you are cooking rice in liquid, slowly, and adding cheese. Takes around 40 minutes start to finish but it is so good!
Risotto is also super versatile. Some of my favorite ways to make it are:
- Add in asparagus towards the end for an added vegetable
- Add cooked Italian sausage to make it a meal
- Substitute shallots instead of an onion for a slightly buttery aroma
The possibilities are endless! Here is the recipe, and let me know if you try it in the comments below!
Creamy Parmesan Risotto
Ingredients
- 4 cups chicken or vegetable stock
- 2 tbsp butter, divided
- 1 small white onion, diced
- 3 cloves garlic, chopped
- 1 cup arborio rice
- 1/4 cup dry white wine
- 1/2 cup Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat the stock in a small saucepan and leave on the side.
- Melt 1 tablespoon butter in saucepan, and add chopped onion. Cook for a few minutes until soft and clear. Add in garlic and cook for a minute until fragrant.
- Add arborio rice and stir, coating rice.
- Add white wine and stir. Let cook for one minute.
- Add in warm stock, 1/2 cup at a time, and store occasionally. Once stock is mostly absorbed, add in another 1/2 cup and repeat.
- Once stock is fully absorbed remove from heat. Stir in Parmesan, remaining butter, and salt and pepper to taste.
- Serve warm.
